It reminded me of my days in <strong data-start=\"3366\" data-end=\"3381\">New Zealand<\/strong>, when we would clean rice manually before cooking. The connection between cultures felt so familiar.<\/p>\n<p data-start=\"3484\" data-end=\"3694\">Each shop seemed to specialize in something unique. One store had nothing but different forms of <strong data-start=\"3581\" data-end=\"3589\">hing<\/strong>, from soft and spongy raw resin to refined powdered varieties. Heaps of dried chillies in every size and shade created a stunning visual. Although I couldn\u2019t take dried chillies home, I picked up <strong data-start=\"4311\" data-end=\"4335\">yellow chilli powder<\/strong>\u2014a specialty of North India.<\/p>\n<hr data-start=\"4365\" data-end=\"4368\" \/>\n<h1 data-start=\"4370\" data-end=\"4421\"><strong data-start=\"4372\" data-end=\"4421\">Jaggery (Gur) Corner: Sweet and Smoky Flavors<\/strong><\/h1>\n<p data-start=\"4423\" data-end=\"4709\">Before leaving, we stumbled upon a shop selling <strong data-start=\"4471\" data-end=\"4482\">jaggery<\/strong> made from various types of palm trees. Each piece tasted different\u2014some sweeter, some smokier.<br data-start=\"4577\" data-end=\"4580\" \/>Unfortunately, I couldn\u2019t take it home due to export labelling restrictions, but the tasting experience itself was unforgettable.<\/p>\n<hr data-start=\"4711\" data-end=\"4714\" \/>\n<h1 data-start=\"4716\" data-end=\"4750\"><strong data-start=\"4718\" data-end=\"4750\">A Market That Stays With You<\/strong><\/h1>\n<p data-start=\"4752\" data-end=\"5043\">Leaving <strong data-start=\"4760\" data-end=\"4788\">Khari Baoli Spice Market<\/strong>, I felt like I had traveled through centuries of Indian culinary history.
